Anyone have any ideas about where I can buy shrimp/lobster/crab shells to make stock in Philadelphia? While I've had luck buying fish bones from fishmongers, nobody has ever had shells. I don't know if it's the sort of thing I might be able to set up in advance.
Also, failing buying just the shells, if I'm more interested in shells than meat, what do you think would be the most budget-friendly crustacean to use for stock? (Granted, I'd use the meat too, but it's not my main priority.)
