I don't have a pizza stone, but today it occurred to me to use my paella pan, just a large standard steel paella from Spain. It worked great! The bottom is designed with little bumps, so the crust came out crisp and cooked perfectly. Thought I'd pass it on as a tip for those, like me, who have a pan and not a stone. I think it would also work to put the paella over an outdoor grill.
