pizza dough in bread machine (rise time)

In a few recipes for pizza dough I'm seeing directions to let the dough rise for approx 18 hours, however in the directions in my bread machine manual I should let it rise for just an hour. Is anything happening within the machine that allows for such a dramatic decrease in rise time or should I still let it rise the full 18 hours?

I'm an Alton Brown fan and anything of his I've tried has been incredible so I want to try his recipe and this a prime example of the 18 hour rise time
