When Robert Martin emailed me back that he would open his The Prospector of Twain Harte Restaurant on Sunday night, though it's normally closed, I realized i was one lucky pizza-lovin' human being...he was hurtin' from several damaged ribs he'd recently injured but with his asst, Silas?, Robert made 3 incredible meat based pies for us and 2 other lucky diners he let in before puttin out the closed for a private party sign...home cured pepperoni, prosciutto,pancetta and mixed with pesto, olives mootz and his deliciously simple, VPN certified sauce...the pizzas were perfect! though pretty much VPN based, Martin's crust emerges from the toasty oven with a crispness normally not encountered with VPN...but i definitely prefer it...OK, as if that wasnt enough, after we were done, he disappeared back to the cooking counter and I could only imagine that he was whipping up one more pie, a dessert pizza. It was, as they say, to die for...carmelized sugar, truffle infused honey and mascarpone...ya gotta be kiddin' me...Unfucking believable! Robert, youre the greatest! And anyone fortunate to be in California Gold Country( the Sonora area) get thee to The Prospector in Twain Harte, tues-sat from 5pm till the dough runs out!
