So i want to make pizza at home.. Been reading around and been watching an alton brown episode on pizza making. He stresses the importance of TIME in making the pizza.. Now i wonder if as much time is really needed as he says.
Im going to list the recipe and steps below- please let me know your input and any tips you have for successful pizza making.
2 tablespoon sugar
1 tablespoon salt
1 tablespoon olive oil
3/4 cup warm water
2 cup Bread flour ( for bread machine)
1 teaspoon instant yeast
attach paddle and bring dough together
lube up hook and set on medium for 15 minutes.
Remove.. fold dough in itself and roll using palms to tighten.
put in bowl.. with olive oil. cover w/wrap and place in fridge for 24 HOURS
24 hours later.. dough should be 1 1/2 times bigger.
Bisect dough- Mash each ball to redistribute gas and then roll into tight ball again - wet the counter to ease tension.
cover and rest for 1/2 hour.
