Continuing the Pistachio thread from the What's My Craving area:

Sahadi has had Iranian pistachios pretty much continuously for the 20 years I've been going there. The're good, but the Sahadi staff recommends the California ones, and I think they're better -- bigger, fresher and with a fuller flavor.

Even though it's a pain to shell large amounts for cooking, you should never buy pistachios pre-shelled, even at Sahadi, since they go stale almost immediately.
