pistachio brittle from The Last Course - not brittle - just gooey

I tried to make the brittle from Claudia Fleming's book this weekend and it never got hard, just stayed gooey.

Any ideas?

I may have added a 1/2 T EXTRA butter, could that cause it?

I used Florida Crystals organic sugar, could that cause it?

I'm not an expert on making candy, but I did get that nice caramel after 12 minutes that she calls for.
