Okay, I'm trying to master the pineapple upside down cake for christmas. My mother hasn't had one since the early '60's and it's her favorite kind of cake. (She hasn't had one because she insists only her mother could make them properly)
I've got a 10" cast iron skillet, I've read the older joy of cooking's recipe and I'm going to do a trial run this weekend.
Does anyone have tips on making one of these? am I trying to make the top of the cake crispy? buttery? Any standard problems I should know about ahead of time?
