How to use my Pig's Cheeks?

I recently bought some guanciale (thanks for that thread), but other than in amatriciana, am unsure where to use it.

Also: it smells a bit cheesy. Should I cut off the rind, or rinse in vinegar? Anybody's Roman nonna have a recommendation for me?
