Pig foot tips.

Can anyone help me out here? Anytime I make pig's foot, the skin tightens so quickly that the bones and meat, etc. are pushed out. Is there any way to prepare pig's foot so that I end up with a relaxed, tender foot rather than a tough lump of gristle and bone?
