Piedmont Questions! Combal Zero, Pizza Duomo, or Il Centro?

Hey all, I'm a Los Angeles based hound who will be living in Lyon for a month or so. Anyways, I'm gonna do a little road trip through northwest Italy and will be spending one night somewhere in Piemonte.

Where should I go for one lunch and one dinner that will blow me away? I definitely want cooking that is unique to the region and harder to find in LA.

Price is not really an issue, although I'd prefer for food costs (not including drinks) to be under 250 Euros.

Currently thinking Combal Zero, Piazza Duomo, or Il Centro for dinner. Maybe da Bardon or Guido Ristorante for lunch? What do you recommend?

Also, I have no problem driving long distances. Routinely drive an hour both ways to dine in LA. I'll have a rental car.
