Thanks to all that made suggestions for a non-pie pumpkin dessert -- I ended up making an apple-streudel-pumpkin cake that was reasonably easy (albeit sorta time-consuming) to make with good results. I got the recipe on Epicurious.com (search for "apple pumpkin")
My question is whether or not I can freeze it since the topping is apple streudel...? Any thoughts?
(Tonight I'm going to try the pumpkin cake roll someone recommended, too.)
