Picked blueberries over the weekend and made some pies. I like to make the mini 4-inch pies (with foil pans) so I can give some to family and friends.
I had enough dough left for one more pie so I scanned the fridge for something to put in it. Found one slightly tired nectarine and a mango. Chopped them both up, added some sugar, fresh grated lime zest, a little corn starch, dab of butter and the tiniest sprinkle of salt.
Oh, so delicious. What a happy accident!
