So here is a puzzle for ya all (or I-really-really-desperately-need-some-help).
I recently moved to Vietnam, where it can get to 36, 37 Celsius. Since moved here I have found that I hadn't been able to make a good fruit pie and it's killing me!
As you all know, the secret of a really nice, flaky but not dry crust is cold cold butter. But the goddamn thing just melts the instance I bring it out of the fridge! I tried freezing the butter before hand. I tried freezing the flour, etc, and everything just turned to mush once I started rolling (and I'm too stingy to turn on the air con just to bake a pie). I tried the melted butter, pat-on method and didn't mind the short-bread like texture but couldn't do lattice with it. I tried the oil method but detested the dry hard texture and it was flavourless as heck.
So... I'm here seeking help. Anyone has a recipe or a method that doesn't require me to create the cold miserable English weather with my air con?
