VERY Picky Eaters - Help with new dining

We are very picky-we visit often for years now & are set with some places but hope to find some new ones & look forward to your assistance. Our favorite is true Italian, we are not interested in high end fine dining (Per Se, Marea etc), Deli, nor American or Steakhouse food restaurants. We do not eat fish or sushi, we love shellfish but not raw, no communal tables, meatpacking locales or crazy way too crowded scenes. We prefer to only eat downtown and not above midtown and in Manhattan & not the outer boroughs. Our dining budget is around $50 - $100 per person (or preferably less!) before tax & beverages. We also love wine bars with food but not necessarily for a meal.

Places we like:
Babbo, Otto, Balthazar, Peasant, Blue Ribbon Brasserie & Bakery, Raouls, Lupa, Bacaro, DelPosto, CTBrasserie (Love all Asian especially VERY spicy but for spouse has to be vnice modern atmosphere w/good wine list so CTown is probably out), Casa Mono, Salumeria Rosi (Will travel north for Caesare), Via Emilia (true Bolognese pasta & wine), Posto (love the nearly cracker crust style pizza there) & Shake Shack.

We have tried but not loved:
Momofukus, Maialino, Osteria Morini, Motorino, Il Buco, Pulinos, Trattoria Maletesta, Dell'Anima, Degustation, Minetta Tavern, L'Artusi, Veritas, I Trulli, Crispo, Ciano, AVoce, Locanda Verde, Schillers, Pastis.

We are interested in & would like input on:
Sorella, Il Buco Alimentari, Terrior, Barbuto, Bhuddakan, Parma, Torrisi, Barbone, Burger& Barrel, Rubirosa, Manzo, Birreria, Buvette, Soccarat & yes we have done searches but wonder how they might be with our preferences. Plus any other advice of course!

I apologize for our finicky palates & hope you do not castigate us for iit & hope you might lead us to some new places we will love.
