I’m interested in pickling some veggies for some particular reasons. I’m a broke college student and I’ve been trying to make use of cheap, fresh veggies and one of the things I’ve come across is pickling.

I want to be able to cheaply pickles veggies so that they are ready fast, last a while (more than 1 week) and aren’t extremely laden with sodium.

I’m particular to carrots, celery, cucumbers, peppers (jalapeño, bell, more), and am open to more.
