What To Do With Pickled Pork?

I am making red beans and rice for Memorial Day. I'm using Kenji's recipe for the red beans and rice, and Alton Brown's recipe for pickled pork.

Being a life-long Yankee, I had never heard of pickled pork before reading this recipe, but it seems easy enough to make myself. The pork is currently in brine in my fridge.

My question is, Alton Brown's recipe makes a pound and a half of pickled pork, but the red beans and rice recipe calls for only 8 ounces of it. So I will have a pound of pickled pork leftover, and I have no idea what to do with it.

Any suggestions? I was thinking maybe some greens with pickled pork and bacon might be good, but I really have no idea. I'm a pretty adventurous cook, and farmer's markets have just started in my area.
