Pickled mustard greens

I have three different recipes (from 3 diff. sources) for Cambodian pickled mustard greens. All start out by blanching the mustard greens in very hot water.

Anyone know why?

BTW, all sorts of pickled mustard greens are delicious. Sometimes Asian supermarkets have them "fresh", i.e. in a tub, rather than packaged.
