Pickled Herring

I was very exciting to see herring at H Mart so I bought three. I want to make picked herring in wine sauce and found this recipe: http://events.nytimes.com/recipes/883.... However, I don't think I have salt herring. It appears to be fresh fish. Can the recipe be adapted, or can anyone recommend another? I'm going for Jewish-style pickled herring, not Scandinavian.
