Pretty good bowl of pho! Broth was light and clear and yet complex and flavorful. Aromatics comes through but not overpowering and no MSG effects were detected. (think owner mentioned he used mushroom seasoning instead). I like how one can choose between fresh and dry noodles as well as select one's own meat combo. Overall regular pho with beef broth was enjoyable. However, any even more stand out dish was the Bun Bo Hue ( Central Vietnam Signature Noodle Soup ). This creation has a broth with a taste profile that was so exotic and amazing ( An umami laden beef broth infused with spicy chili oil seasoning and a mixture of salty, fermented Crustacean paste ). It must ranked as one of the best soup broth I have had this year. Only minor issue is that the beef brisket was still a bit tough. This I conveyed to the friendly wait staff who was happy to convey the deficiency to the chef.
So, in conclusion, the broth was excellent, selection was varied, the quality of the toppings above average for Markham, the service was friendly and polite. Definitely a place worthy of multiple re-visits!
