Petit Fours in San Francisco?

Syre | Jul 5, 200101:28 AM

I am continually dismayed by the miserable state of pastry baking in San Francisco. For some reason, bread is fine -- there are all sorts of sources of acceptable bread -- but I have found NO good source for pastries.

The San Francisco idea of a good layer cake, for instance, seems to be one in which there is more icing than cake, and in which the icing used to cover the cake is the same icing used to fill it, and in which both the icing and cake are completely unremarkable.

Where is the ganache? The glaze? The moist layers of cake fortified with simple syrup? I have found them nowhere.

So I suppose it's too much to expect to find a genuine petit four -- the kind which is a miniature cake, fully and individually iced and glazed, with light layers of genoise and a delicate filling of jam? To make such a confection requires all the skills which are apparently lacking in our San Francisco pastry chefs.

But I have not given up hope! So if someone is aware of a real bakery which produces real pastries in San Francisco, please let me know.

And if you are about to suggest Citizen Cake, or Just Desserts, or Sweet Inspiration, please stop now. None of these qualify. Citizen Cake, for all their pretentions is nothing like a serious bakery!

Thanks for any hints!
