Im making petit fours for the first time for a baby shower. Im a reasonably experienced baker but accustomed to a bigger scale, which I imagine is more forgiving.
I want them to taste really great, in addition to looking good.
Any advice as to cake type (sponge?) and fillings?
How about the icing? I was thinking of tinted poured fondant ala the Cake Bible, but Ive never tried it.
Is there a chocolate icing that would pour, coat well, AND taste great? Im considering ganache, but I fear that it would not set firm enough to pick up and eat with fingers.
Any tips for making the petit fours look really symmetrical and flat?
