Perugia, Alto-Adige and Piedmont

We have planned a trip with friends who spent a few years living in Bologna. We begin in Montefalco and Perugia, will spend a few days in Bologna, will head north for a visit to the Dolomites and then a return to Piedmont for a little truffle and barolo indulgence.

We are staying mostly in airbnb's and so haven't scheduled dinners out for every night. Your recs will be appreciated.

I'll provide a trip report with restaurant reviews when we've returned. Our restaurant Itinerary (so far) is:
Osteria il Sagrantino, Montefalco
Osteria a Priori, Perugia
Battibecco, Bologna
Cesoia, Bologna
Bolzano and North we are wide open - We'd love recommendations if you have any.

Voglia di Vino, Alba
Trattoria La Coccinella, Serravalle Langhe
Centro Storico, Serralunga D'Alba
