We are back from the foothills with ~20 pounds of ripe and nearly ripe Hachiya persimmons and I could really use some recipes! I have a good persimmon pudding, but earlier this month got fixated on persimmon cookies. The couple of recipes I tried produced a really cake-like cookie, that stayed very puffy, and sort of dry. I want a cookie with a softer, richer texture. Any suggestions?
Also, any recipes for 'give-away' type baked goods would be appreciated - we need a bunch of last-minute gifts for neighbors, not-very-close friends etc. to have on hand.
Is Tom Armitage still contributing to this list? Last year he posted a message enumerating all the stuff he makes with persimmons. Would love to know more.
