Persian Food and Verjus/verjuice question

Jerome | May 13, 2004 03:51 PM

Hey all.
There's only one place I know in Los Angeles that sells verjuice (fr.verjus), the unfermented juice of wine grapes which I imagine is basically must, but one uses it in cooking, or as a substitute for other acids like lemon juice or vinegar.

The problem is, only one place I know sells it and it's expensive. So, I've heard that in Persian cooking, there's also a verjuice. There are many Persian markets here in town. Does anyone know the persian name for the verjuice?

Thanks.
