As winter approaches, we will be turning more and more to the frozen vegetable section rather than suffer the bland off-season imitations shipped from all over the world. I have bad memories of those watery mixed vegetable combos that my mother used to inflict on us every night. She's a darned good cook except for that little sin.
Who wants to share their tips for fast ways to make frozen veggies a bit more exciting?
Last night I tossed about half a tablespoon of butter and some key lime juice into formerly frozen green beans. We were darned happy with the result.
We also like to toss steamed broccoli with a small amount of oyster sauce.
We've found that frozen corn can be cooked under the broiler until it starts to brown and carmelize slightly with good results, and we also add pesto to our frozen corn on occasion.
