step 1: buy a lodge skillet and season it.
step 2: buy a wooden spatula. also buy a very thin spatula - its 'blade' is so fine that you can riffle it like paper. any good utensils store should have one.
step 3: use your favourite cooking olive oil and spread some over your skillet. put the flame on high and wait for the olive oil to start smoking. soon as it does, turn off the flame.
step 4. crack in a couple of the freshest eggs you can find. soon as the white firms up, use your nifty spatula along with your wooden (for right handers like me, thats wooden in the left to keep the egg in place and nifty in right to turn) to flip the eggs over for about ten seconds.
the real trick is to figure when the whites are firm enough to slip; a little practice with the nifty spatula lets you make that flip surprisingly early while theres an appreciable amount of egg white still to set.
