I made some buttermilk pancakes this weekend using a recipe from the Farmhouse Cookbook. They were light and tasty, but a bit too thin for my tastes (maybe due to using powdered buttermilk??).
In referencing Epicurious, I found this recipe (link below), as well as a discussion on it's merits versus a Cook's Illustrated recipe (provided therewith by a "Toronto" reviewer).
