Discovered a dinner guest allergic to iodine when serving crab cakes. So whipped up this substitute that worked better than I could have hoped using cubes of heart of palm as crab substitute.

1 egg whipped
1 can drained heart of palm
1 cup whole milk
2 tbsp. flour
6 tbsp. butter
breadcrumbs
Yellow onion
Green onion
Salt – non iodized
Mustard
Cayenne
Black pepper
Bay leaf
Cloves
Allspice
Ginger
Mace
Cardamom
Cinnamon
Paprika
Celery seed

Sautéed chopped yellow and green onions in 3 tbsp. butter. Mixed in 2 tbsp. sifted flour and 1 cup whole milk stirring constantly over low heat. Added spices to white sauce. Took a can of heart of palm and chopped into quarter inch cubes then mixed with a beaten egg. Mixed this with cooled white sauce and bread crumbs. Made six patties, browned 3 minutes on each side.
