Just read your piece elsewhere on this site about traveling to Portugal to eat perceves. By now, you probably know that they are on the menu at ILO, Rick Laakkonen's restaurant on 40th Street between 5th and 6th. They are one of several ingredients in his "Tidal Pool" along with sea urchin, oyster, seaweed, and a couple of other things in a very Japanese-style broth. When I had it 2 weeks ago it blew me away! The tastes, the textures ... aaaaaaaaaaaaaaah. Do let us know what you think if you have them there.
