Peppino's: Their Salads Rival The High End Joints

I have reported here previously about the antipasto salad served at Peppino's in Chino Hills, well today I had an even better composed salad for lunch at Peppino's. Touted on the their menu as "Roasted Salmon Salad - Fresh roasted salmon on a bed of Fresh Mixed Greens with Asaparagus, Onions, Artichokes, Sun Dried Tomatoes and fresh Buffalo Mozzarella with Roasted Bell Peppers and Olives." It was everything that was promised.

I wish I had brought the camera, this salad was a thing of beauty, everything fresh and deeply colored various shades of green and red. The asparagus spears were juevenile spears, nice and thin and green, slightly cooked then chilled but with a good crunch to them. The salmon seemed to be the farm raised type, resembling in shape and size a large trout (this was a very generous portion). It was encrusted with seasoned bread crumbs and was wonderful, cooked properly, not overdone, very flavorful and a perfect match with the greens. When they asked me what dressing I would like, I said, leave it naked, Peppino's has oil and basalmic vinegar on all their tables and that was all I needed to dress this wonderful platter of Mother Earth's riches.

The salad was $10.95 and worth every penny, and then some.
