So my coworker gave me her recipe for Chili which is really really good. And while by definition mild for the rest of us it is still too spice for a 2 year old. So I was wondering what milder chilies could I use to tame the heat in substitution for the hotter chilies. I figured DH and I could add back our own spice (ie jalapeno juice or Tabasco).

But the recipe calls for 8 dried anchos and 1 tsp of chipotle chili powder.
I was *thinking* about maybe substituting some dried cascabels and using regular chili powder. That being said I am a complete amateur in this.
