I fell upon this website a few days ago and have really been enjoying it. Lots of great discussions and plenty of good information.
How hard core are you? Are many of you chefs or have been to culinary skill? Which chefs do you eschew and who do you embrace? How do you feel about "Cooks Illustrated"?
I like cooking because I love good food. I figure I'll be doing it anyway for the next 30 years for my family so I might as well be good at it. 8 years ago, I couldn't cook at all. I wanted to have a dinner party, but realized I'd have to learn to cook in order to do that. I talked to a friend whose food I enjoyed and she gave me some simple preparation ideas for salmon and that's how it all started. I've gotten much better over the years. I got a couple of tricks up my sleeves and can usually produce good meals. I shoot for one protein, one starch, and one vegetable. Sometimes I'll cut out the starch and make two vegetables especially since the farmer's market is open. Recently, I've been moving towards local produce, grass fed beef, and pastured chickens. This has posed new challenges for me. I should also mention that I don't really do dessert. I put so much energy into cooking that I don't have much left for baking.
There's lots of room for improvement, however, which is why I'm really excited about this board! I look forward to spending more time here!
