"Peasant" food

I am looking to expand my peasant cooking repertoire. Some of my better peasant dishes are red beans and rice, polenta served with a basic tom sauce and mozzeralla, rice cake with a black bean salsa and a few others. I am looking for some suggestions for some other dishes that have some real bang for the buck. roasts are always good but usually some of that goes to waste because it is only myself and my wife. What are some of your favorite interesting cheap dishes?
