IIRC, quite some time ago, a poster was looking for an easy, no-bake dessert involving peanut butter. I knew I had one from one of my co-workers, but couldn't remember where I'd put it and she'd left the company. Now, much too late for the OP, I've just stumbled onto it and figured I'd post it anyway. It won a prize in my company's holiday bake-off.
Peanut Butter Balls
Makes approx. 45 balls
½ stick unsalted butter
1 cup (small jar) chunky peanut butter
½ lb. powdered (confectioner's) sugar
1¾ cup Rice Krispies
11 oz. chocolate chips
Melt the butter and peanut butter in a large non-stick pot, stirring continuously. Remove from heat.
Stir in Rice Krispies, then sugar. Form into small balls and place on cookie sheet. (If mixture is sticky either add more sugar or place into refrigerator for a few minutes). Put cookie sheet into refrigerator to chill for 15 minutes.
Melt chocolate chips in a double boiler or small pot, stirring continuously. Dip balls into melted chocolate and place on a cookie sheet that has been lined with wax paper.
Chill in refrigerator until chocolate has hardened, about 15 minutes. Enoy!
