PDX 3 Nights for THX WEEKND, Itinerary Help

Hi PDX FOODIES!!!

So excited to spend 3 nights in Portland next week. This trip was kind of last minute, so I won't be able to book those impossible rezzies etc. I could use your help since there are SO MANY RESTAURANTS that look great!

Background, my husband is a pescatarian, I eat almost anything. I'd rather not do Italian because we eat a ton of that in LA where we live. I'd love to embrace "PACIFIC NW" cuisine, whatever that is. Unless it's crazy exceptional, I'd rather skip ethnic restaurants since this trip is so short and focus on local flavors (i know your local flavors include amazing ethnic food, but I'll save that maybe for next trip). Actually Thanksgiving we have a fancy buffet at a hotel booked, so only 2 days of eating!

Also my husband LOVES oysters, but I can only eat a few at a time. So a place that has great oysters for him but other stuff for me would be fab.

Le Pigeon has no avail tables when we're in town.

Perusing the Eater PDX 38 Essential, I am considering Beast, Olympic Provisions, Paley's Place.

Or if we go the HAPPY HOUR route, a friend recommended Portland City Grill or Jake’s (Friend being a foodie but not a Portland resident)

Am I missing something great?

For lunch I think Ken's Artisan, Maurice, maybe PODs. (Which pod clusters will be safe the Friday after thanksgiving? Will it be shut down?) Also I can't help but want to try Pine State Biscuits tho I'm worried that makes me sound like a silly tourist :P

Also I should add moderate price to the spendy spectrum of moderate, but probably not tasting menu level expensive like Holdfast.
