Among the many things I miss from the DC area (now in the deep south) is the filler-intensive sausage (beef? pork?) that is frequently served at the various pay-by-the-pound locations for breakfast. These were served either whole in weenie fashion or sliced diagonally and accompanied by sauteed green peppers and onions. Believe it or not, I have searched the major supermarket chains here (Publix, Kroger), as well as, the "better" specialty markets like Fresh Market and have not been able to find something similar. Can anyone provide some details on these elusive sausages, so might I be able to satisfy this most unusual desire for a low grade breakfast meat?
