Hello, I am the bride to be, and I am the only one I know who knows how to make pavlova. It's my favorite dessert ever and I want to serve it in place of a wedding cake.
Lots of questions and concerns arise:
1. How many servings are in a typical pav recipe? Because according to all the ones I have made, about 9-10 inches pre-bake, it's like 5 servings. (Maybe I'm just a fat typical American? haha)
2. How many pavlovas would I need (and of what size) to serve 60 people?
3. Should I make individual mini-pavs, or keep the classic pavlova size?
I have seen those beautiful pavlova towers on Google images, however I have no idea how a person is supposed to cut into that and serve it without the entire thing crumbling to the ground....
Also if anyone has suggestions/tips/experience, please chime in!
