Pastry Brushes: Silicone vs Natural? Brand recs?

arielleeve | Jan 23, 201609:10 AM     1

Interested in hearing people's thoughts on good pastry brushes. ATK recommends the Good Grips silicone one as its top pick, and in general they give very poor reviews to natural bristle brushes. I have the Good Grips and like it a lot, but I find there are some tasks that it's just not delicate enough for. For instance, brushing butter onto phyllo dough or puff pastry. The silicone bristles don't do a good job at spreading easily (kind of streak it on), and they are more likely to tear the dough. Am I missing something here in why ATK would consistently pick a silicone brush over a natural bristle one?

That said, all the natural ones I've bought have had very short shelf lives, and the bristles are always falling out into whatever I'm brushing. Not sure if I've just been getting the wrong kind. As a vegetarian, I don't like to buy boar's hair bristles, so the synthetic / imitation boar's hair ones are probably not as reliable. Anyone have any recommendations for a pastry brush to keep as an alternative/addition to a silicone one?
