I am tired of empty shelves and mushy flavorless pasta. I am also thinking of something other than generic spaghetti in terms of shape.
I can generally find Barilla pasta in common shapes which is passable but, right now it is a bit price gouged where I live and not terribly exciting in terms of the texture or flavor. American Beauty, Skinner, Great Value, etc. are generally not available locally due to hoarding and panic buys by SNAP recipients and struggling mothers though I wish those families had access to something that wasn't mushy flavorless pseudo-paste/pasta.
How hard is it to make decent pasta at home? I'm thinking about the long strand and egg varieties but, I'm open to some of the other options like Gnocchi. I wonder if a brass die "homeowner" option exists to extrude Bucatini and other shapes. I am open to using one of the "Mercato" style strand pasta makers for simple spaghetti, linguine, and fettuccine.
Obviously, near term, I would like to buy some "brass die" pasta with good flavor, texture, and general quality. De Cecco seems to be one available randomly locally here in East Texas but, I have read some mixed reviews on this and the Colavita brand as well. The Kroger and Albertsons "store brand" premium pasta seem to get pretty good reviews but, I wonder if that is due to being compared pasty mass-market varieties (Skinner, American Beauty, etc.).
