I am planning to make a carrot kugel for Passover, and I loved Marion's idea of kugelettes(for potato kugel). I am wondering if I can adapt Joan Nathan's carrot kugel recipe, and make individual, muffin-size carrot kugels? Also, do you think I can prepare the carrot kugelettes in advance and freeze them? I am not so concerned about the "look" of the muffin, just concerned that they would taste as good (or nearly as good) if I froze and re-heated them. Thanks to all you wonderful ccoks!!!
