Paso Robles Wineries - What are the hidden gems?

My wife and I are traveling from the Midwest to Paso Robles for the first time. I have read a few posts from the past couple years. I was hopeful for a few recommendations for wineries to visit. We plan to do one day each on the west side, east side and in town/south side. A few preferences include:

• Smaller production wineries (garagistes) where you are likely to meet the folks directly involved w/ the process. Love people who emit enthusiasm about their wines! A kitchen, living room, garage or smaller venue does not scare us!!!
• I’m an architect and a contemporary setting w/ unique architecture is always an interest.
• We have a couple photographers, so stunning views and unique settings are great.
• We enjoy a fun atmosphere and playful presentation of wines.
