parve dessert for thanksgiving

My daugher's birthday was yesterday...she wanted a pumpkin cake...we needed the cake to be parve because we were eating meat.. a google search yeilded a pumpkin spice cake with a caramel filling from epicurious . I substituted a fruit filling for the very milchig caramel...the cake is a winner...almost like a gingerbread.

i think that it isn't exactly kosher to exactly post a recipie copied from another website...but the fruit filling was my own.. ( 3/4 of a cup of raisins set to soak in hot water with a healthy dollop of bourbon, chop the raisins -I used a blender, add a tablespoon of apricot jam and one of cocoa - let the mixture cooland spread over the cake.. a nice counterpoint to the mellow spicy pumpkin cake).

My mother in laws' birthday is thanksgiving.. I think that the cake will make another appearance then...
