Party food for Vietnamese-americans?

I want to prepare a food party for my daughter's 8th birthday party. As is our family custom (Vietnamese Americans), we invite our extended family which is about 20 adults and 10 kids. Most of the time we just order out to some Vietnamese home cooker business (maybe another topic?) for Vietnamese food. It's not bad, but I'm (and I think they might as well be) tired of the sameness. I want them to enjoy something more American but compatible with occasional Vietnamese influence.

I'm thinking of prime ribs which I've done in the past with ratatouille and avocado soup (they only eat thinner slices of prime rib and prefer them well-done %^| ) with a leg of french ham, and then something else? The party will last about 5 hours so will the food have to.

It's mainly geared toward adults, because kids can be pleased with pizza and other convenient bribery.
