I am hosting a bridal shower and am at a loss for recipes that aren't boring. The main event will be drinking champagne, I'm sure, but I would like to have some delicious munchies as well.
The bride LOVES beets, and i got this amazing jar of pickled beets from rick's picks nyc as a gift so i thought now would be the time to use them. they are sweet and aromatic - pickled with rosemary, ginger, and lemon - and delicious. they will be sliced on a little crostini with goat cheese and some sort of garnish.
What the hell should i serve with these? The bride is pescatarian.
The CHOW roasted eggplant and walnut dip also sounded good. Maybe go with a mediterranean kind of thing?
i have never hosted a 20+ person party and would be very grateful for any advice or ideas.
