I just bought a fairly large chunk of fresh parmesan, which I plan to grate myself. My question is, should i grate just what I need, and freeze the rest? Should I grate all of it, and freeze the grated leftover? Can parmesan be frozen, either grated or as a chunk? Also, if you don't suggest freezing, how can I store it, and for how long? Thanks.
