Paris with wife and kids chow worthy 8 jours Juillet

Finally, the kids are old enough to behave and enjoy food! My wife and I adored Julien when it was part of Brasserie Flo, but looking at the current menu there's no cassoulet, no bone marrow, no profiteroles! Perhaps the new menu is more appropriate for kids, the bouillon with noodles should be fine and my wife should like the calf's head, but where do I go nowadays to get that experience, great places to get Os à Moelle for my wife and magret de canard for me? Must find good profiteroles et chocolat chaud for the kids, the whole experience when they bring out the chocolate to pour over them.... We are also sad that l'ambassade du sud-ouest is closed, any recommendations in Paris for food from the south of France, a lot of different duck on the menu, not to mention cassoulet? We'll be planning at least one dinner out without the kids, lots of meals with them, ages 9-12.
