Paris Trifecta Search: One* Two** Three***

My husband and I will be in Paris Jan. 28-Feb. 6. We have decided against a side trip because of the short time period and are opting instead for a dining tour. We thought we'd try four restaurants as a theme: one popular no star through a Michelin 3*.

We usually look for a menu which includes beverages or where a wine pairing can be added. See Auguste below for a median we're comfortable with per person. My list of possibilities:

No Star: Pierre Sang?
1*: Auguste (dinner 118 euro all-incl through the Fork), or Ze Kitchen Galerie (similar price dinner) or Qui Plume La Lune (lunch 90 euros all-incl), or Il Vino D'Enrico Bernardo (love the "food pairing" concept).
2**. Le Grand Vefour (lunch special menu)
3***. L'Astrance (lunch special menu)

L'Astrance is the 3 star we can afford given we have three other restaurants to try. Le Grand Vefour I've been trying to get to for years. Could swap out for another two star if someone has a strong opinion.

It's the one star restaurants and the no star one that are the difficult to decide on. I have avoided Ze Kitchen Galerie for years because it's always been so hyped; I guess it's worth it if it still exists. Not sure about pairing it with Pierre Sang because both have the Asian-fusion thing going on.

Love a "surprise" menu. No allergies or issues trying new things.
