Paris - Tasting menus that will accommodate vegetarians

Hi - My wife and I will be spending a few nights in Paris this summer and we have a bit of a dilemma. We both love tasting menus, but my wife is vegetarian and I am whatever the polar opposite is. That's yielded us spotty results here in the US -- some restaurants will accommodate vegetarians in thoughtful and creative ways (e.g. Alinea), while for other restaurants it's clearly an afterthought (or worse yet, perceived as an affront to the chef).

Should I be worried about this in Paris? Are there any restaurants that stand out as an incredible experience for both the omnivore and vegetarian?
