Paris, high difficulty rating: weekend + New Years + kids!

We'll be in Paris for a long weekend, arriving late Friday Dec 30 and leaving midday Monday Jan 2. Two kids, 6 and 11 -- they have enjoyed Michelin-star-level restaurants in the past, and we are willing to spend on them, but they may not be adventurous about e.g. escargots, unfamiliar seafood. Lots of places are closed weekends. Lots more places are closed on Dec 31 - Jan 1. I need:

Dinner Jan 1

My dream is to find a place for dinner where the food is both really great and really French (it's my kids' first time in France and probably the last for a while, we're in the US), open on New Year's Eve but not serving an overpriced over-the-top NYE menu that my kids may reject half of. We're staying in the 1st arr. near Les Halles, but aren't tied to that location if great food calls us elsewhere!

As for the lunches, we will be mostly hitting the Standard Top Sights: so tell me about great lunches that are near the Louvre, Notre Dame, Musee d'Orsay, Eiffel...? We are totally open to saving money by hitting an expensive and wonderful restaurant for lunch, but I'm having trouble finding one that's open for lunch on the weekends. We won't have fancy clothes with us, if that matters.
